Chocolate Nugget Cookies

This is my favourite cookies, and I like to share it with all of you.

350 gm or 400 gm of TOP flour (plain flour will do too)
100 gm light brown sugar
100 gm ground almond
250 gm butter (preferably unsalted)
add a pinch of salt
half teaspoon of bicarbonate of soda
pieces of chocolate nuggets (this chocolate is round in shape like coins)

1) Beat butter, salt and brown sugar till light.
2) Sift flour together with bicarbonate of soda.
3) Add in the ground almond into the butter mixture. Mix well.
4) Add in flour to the mixture and mix well to form a soft dough.
5) Take a small portion of dough and roll it with rolling pin.
6) Roll about 1/4 thickness of an inch.
7) Use the pineapple tart cutter/mould to cut it in shape with the depression in the middle.
(Note: If you do not have pineapple tart cutter, just take small amount of dough roll out like marble and make a depression in the centre and flattened the dough a little bit. The depression is to fit in the chocolate nugget.)
8) Place them on baking tray and bake for about 10 mins.
9) Take out from the oven, then place the chocolate nugget in the centre.
10) Bake for another 10 mins.
11) Cool on rack, and place in an air-tight container.

thanks for sharing, will try this recipe as soon as I find where to get bicarbonate soda.:D

Try out bakery section in the supermarket, insha'allah you can get it there.
Btw, can subtitute bicarnate soda with baking powder. Bicarbonate soda makes the cookies a bit 'crunchy'. :)
