My mother makes the most springy-to-the-feel cakes, and they are gorgeous! I made one a few days ago and ate it at Sehri time. This is how:
What You'll Need
6oz Sugar
6oz Soft butter
6oz Self Raising Flour
3 eggs
1 teaspoon Baking Powder
Few drops Vanilla Essence
You may need a few drops of milk/water if the consistency is too thick
What to Do
1)With an electric mixer or a food processor mix together the sugar and butter until smooth.
2)Add in the eggs and whisk
3)Add in flour and continue mixing until smooth
4)Add Baking Powder and Vanilla Essence and mix further
Place in oven for about 20 minutes on 180 degrees in two cake tins
Once cooled down, whisk double cream and spread a layer on one cake and spread a layer of jam on the other cake. Put the two together and there you have it!
