Homemade Cheddar Crackers

Ingredients:
■2 cups, sharp cheddar cheese, shredded
■4 tablespoons cold butter, cubed
■1 cup flour
■¾ teaspoons salt
■2 tablespoons cold water

Directions:

Pulse everything (except water) together in the food processor until the dough becomes crumbly.

Pulse in water, 1 tablespoon at a time.

Remove dough from the processor, wrap in plastic, and chill for 20 minutes.

Roll out the dough and cut into desired shapes. Place on a parchment paper or foil lined cookie sheet.

Bake at 350 degrees F/175C for about 15 minutes, or until crispy.

Allow to cool completely before storing in an airtight container.

You can add to them your favourite spices like paprika, chili, thyme or what you prefer. Less fatt than in those snaks you might buy from the market.

And because you have made them by yourself - you know what you eat.

Cheddar Crackers

1 cup all-purpose flour(can use whole wheat for healthier alternative)
3/4 tsp. salt
1/2 tsp. ground pepper (optional)
4 TBSP cold unsalted butter, cut into small pieces
8 ounces grated cheddar cheese
3-4 TBSP water

Directions

Pulse the flour, salt and pepper, then add butter and pulse until the mixture resembles coarse meal. Add grated cheese a little at a time until the mixture again resembles coarse meal.

Pulse in 3 to 4 tablespoons of water, one tablespoon at a time, until the dough forms into a ball. It will probably take a minute or so.

Remove, wrap in plastic, and chill for 20 minutes or up to 24 hours. This way the butter has time to solidify and it makes for puffier crackers.

Roll the dough out to 1/8th-inch thickness directly onto a baking sheet. You don't want to roll them paper thin, neither do you want to roll them too thick. If they are too thin, they will not puff up as much. If they are too thick, they will not be as crispy.

Using a knife or pizza cutter, cut 1 inch squares.

Bake at 350° F/175C for 15-20 minutes or until crackers are golden brown. Watch them after the 10 minute mark.

Parmesan Pepper Crisps

Ingredients
  • 2 cups parmesan cheese, loosely packed and coarsely grated
  • 2 teaspoons of lemon pepper spice blend
Tips & Notes
Can be stored in the refrigerator in an airtight container for up to three days.

Instructions
  1. Preheat oven to 450 degrees F/ (300) 320 C.
  2. Place heaping teaspoonsful of cheese 2 inches apart on nonstick baking sheet. Flatten the cheese mounds with the back of a spoon. Top each mound with a pinch of lemon pepper.
  3. Bake 1 ½ to 2 minutes until just lightly browned. Watch carefully to avoid burning.
  4. Cool 2 minutes, carefully remove to a rack, cover with paper towels.

Luch Box Cheese Crackers

Makes 24-48 crackers depending on the size of your cutters.

Ingredients
1 cup all-purpose flour
¾ tsp. salt
½ tsp. freshly ground pepper
¼ tsp. paprika
1 cup of finely shredded cheddar
4 tbsp. cold unsalted butter, cut into 1 inch pieces
3-4 tbsp. ice water

Preparation

In the bowl of a food processor, combine the flour, salt, pepper, and paprika. Pulse a few times to combine. Add the cold butter pieces and pulse a few more times until the butter is pea-sized. Add the cheese and mix, then add the ice water, one tablespoon at a time, and pulse to combine. The dough should start to come together. After adding 3 tablespoons of water, check the dough. If you can pinch it together between your fingers and it holds its shape, it’s ready. If not, add up to one more tablespoon of ice water and pulse again to combine. Turn the dough out onto a piece of plastic wrap, shape it into a 10” disk, wrap it in the plastic, and refrigerate for 20-40 minutes.

Preheat the oven to 350 degrees F / 175 C. Unwrap the dough and place it on a lightly floured work surface. Roll the dough to 1/8” thick. Cut the dough into the desired shapes and place onto cookie sheets that have been lined with parchment paper or silicone baking sheets. (Gather up the scraps and reroll to make more crackers.) Bake for 12-20 minutes (depending on the size of the crackers), or until the crackers have puffed and are light brown on top. Allow to cool for a few minutes on the baking sheet before transferring them to a wire rack to finish cooling. Serve immediately or store in an airtight container overnight.

Easy Cheesy Whole Wheat Crackers

1 3/4 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup olive oil
1/2 cup warm water + 1-2 tablespoons
1/4 cup parmesan cheese + more for sprinkling

Preheat oven to 400 F/200C.

Mix dry ingredients together, add parmesan cheese, then add oil and 1/2 cup water. Mix until a dough forms. Add additional water if needed. Spray a baking sheet with cooking spray and lightly flour. Roll dough out until very thin.

Using a pizza cutter, draw lines cutting squares in the dough. They crackers will separate as they bake. Sprinkle with additional parmesan cheese. Bake for 10-12 minutes, or until golden brown and crispy.

Salted Poppy Seed Crackers

2 tablespoons poppy seeds
2 eggs
3 tablespoons butter
½ cup oil
1 tablespoon baking powder
A pinch salt
1 cup cornflour
2 cups + 2 tablespoons flour

Preheat the oven to 180 °C (355 °F).

Add butter, oil, eggs, poppy seeds and salt, then mix them together in the bowl.

Add cornflour, flour and baking powder on to the mix. Knead till you have a soft dough.

Divide the dough into four pieces and spread them with the rolling pin.

Cut out pieces using shape cutter and put them on the tray with greased paper on it.

Egg wash all the shaped dough pieces and bake in the oven until their edges are browned.

INGREDIENTS
1/2 cup yellow cornmeal
1/2 teaspoon salt
3/4 cup boiling water
1 teaspoon olive oil

1. Preheat oven to 450F degrees.

2. Combine cornmeal and salt in a mixing bowl. Pour in boiling water and stir, add olive oil, and stir until well blended.

3. Drop mixture by heaping teaspoonfuls onto a well-greased baking sheet and press each one with the bottom of a glass. Bake for 12 to 15 minutes or until golden brown.

Makes approximately 3 dozen chips
