Base:
125g butter
1 cup flour
1/2 cup brown sugar
Caramel topping:
2 eggs
2 tsp vanilla essence
1 cup brown sugar
2 Tbs self raising flour
1 cup coconut
1 cup chopped walnuts
1. Preheat the oven to 180 celsius. Grease and line a brownie pan.
2. Cream butter and sugar together until light and fluffy. Add the flour in gradually until the mixture reaches a course dough.
3. Pour the mixture into the pan and press down until even - it will feel like the mixture won't fill the pan, but it will if you're persistant.
Smooth it out using the back of a spoon. Bake the base for about 15 minutes until light golden brown.
4. In a large bowl beat together the eggs and vanilla essence until thick and creamy. Gradually add in the brown sugar until well combined.
5. Fold in the flour, coconut, and walnuts. Pour the topping over the base and bake for another 25 minutes. Wait until it's cool before cutting!
