Margarine Fried Rice

Ingredients (serves 2)
° 200g rice, cooked
° 100g-150g frozen mixed vegetables
° 1 tablespoon dairy free margarine
° salt and pepper, to taste
Method
1. Heat the margarine in a wok or
frying pan, half a minute. Stir in the
cooked rice, mixed vegetables and
season with salt and pepper.
2. Sprinkle some water if it is too dry.
Fry about 2-3 minutes or until rice is
heated through. Serve hot.
Tip
1. Rice for frying must be cooked at
least 2 hours in advance or the night
before.
