1 3lb leg of lamb
1/4 cup of olive oil
2 tblspoons of minced fresh cilantro
2 tblspoons of fresh flat leaf parsley
1/2 onion grated
1 tblspoon of paprika
2 garlic cloves minced
1 teaspoon of ground cumin
1/4 cup of fresh lemon juice
1 teaspoon of pepper

add all of this to the chopped up lamb in small cubes trim the fat off of the meat and refridgerate for at least 2 hrs or over night. to let it marinate

when ready heat up the grill add to skewers and let it slow cook, for added flavor take something and fan the flames
