I'd like to know your views on people who take your kindness for granted & what you should and should not do & lastly on how to deal with these people.

The reason we help others or share is from a genuine concern, appreciation, and natural wish to make others happy. Some of us may say we do not wish anything in return, however, when our time, energy and perhaps even wealth is disposed for the benefit of others it is disappointing to be taken for granted or even feel like being "used".
Lets just say often human nature can be quite ugly, which can be upsetting when to be a functional society we need to be able to trust, love and appreciate others around us. Its more "ugly" to be let down by Muslims. The problems are only due to inconsideration and bad akhlaq.
As Muslims, we should put the Quran and the Sunnah in our hearts and actions. We should give time to help others whenever we can. I would suggest you continue being kind to other people, remember that Allah is the One who sees and knows all that you do. By your good actions you will be getting closer to Allah, the Most High, because you are doing things that Allah loves.
I would caution you from being "used" though. Try to give yourself time and attention too.
"Verily, then Allah loves those who are al-Muttaqun (the pious)." (Quran: 3:76)
"Truly, Allah loves Al-Muhsinun (the good-doers)." (Quran: 2:195)
"Aisha (radhiyallahu anha) narrated: The Messenger of Allah (salallahu alayhi wa salam) said: "Allah loves kindliness in all matters." (Bukhari)
Allah's Messenger (salallahu alayhi wa salam) said: "The best loved by me and the nearest to me on the seats on the Day of Resurrection are those who have the best manners and conduct amongst you, who are intimate, are on good terms with others and are humble, and the most hated by me and who will be on the furthest seats from me are those who are talkative and arrogant." (Tirmidhi)
