Spinach Feta Loaf

2 cups All purpose flour
1 tbsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. pepper

1/3 cup butter or hard margarine, softened
1/2 cup granulated sugar
2 large eggs
1, 10 oz.(300 g) frozen chopped spinach, thawed and squeezed dry
2/3 cup milk

1 cup crumbled feta cheese
1/2 cup dark raisins

Measure first 5 ingredients into a large bowl, stir. Make a well in centre.

Cream butter and sugar in small bowl, add eggs one at a time, beating/mixing well, after each addition, add spinach and milk, stir to the well.

Add cheese and raisins, stir until just moistened, spread in a well greased
loaf pan (best to use 9 x5 x3")

Bake in 350 degree F for 55 to 60 minutes or utill a wooden pick inserted in the centre comes out clean. makes 16 slices.
