Just decided to share this recipe with you, with pics (of my dodgy cooking) so its more motivating to try out. And what's better, its quite fast (not too sure about the taste though ) Hope you enjoy!
Preparation time: 25 minutes
Cooking time: 10 minutes
What you need:
2 eggs
1/3 cup (75g) caster sugar
2 tbsp cornflour
2 tbsp plain flour
2 tbsp self-raising flour
2/3 cup (160ml) thickened cream
1/3 cup (55g) icing sugar mixture
250g strawberries, diced
(In my recipe, I had no strawberries, so I used mixed berries instead which added to the colour of the cream. I used blackberries, raspberries and red currants)
Method:
(1) Preheat the oven to moderate (180 C). Grease and flour two 12-hole shallow patty pans.
(2) Beat eggs in small bowl with electric mixer until thick and creamy. Gradually add caster sugar, 1 tbsp at a time, beating until sugar dissolves between additions. Sift flours together three times onto baking paper; fold into egg mixture.
(3) Divide mixture among prepared pans. Bake, uncovered, in moderate oven about 8 minutes Turn immediately onto wire rack to cool.
(4) Beat cream and half of the icing sugar in small bowl with electric mixture until soft peaks form; fold in strawberries. Divide cream mixture among half od the sponges; top with remaining sponges. Serve powder puffs dusted with remaining with icing sugar.
