sweet onion frittata

serves 4-6 people

2 tbsp olive oil
4 large onions thinly chopped
1 tsp finely chopped garlic
2 tsp finely chopped oregano
1 1/4 tsp salt
1/8 tsp freshly ground black pepper
2 tbsp vinegar
2 tbsp water
10 eggs
3 tbsp grated parmesan cheese
2 tbsp finely chopped parsley


1. heat the oil in a frying pan. add onions, garlic and oregano and season with half salt and pepper. cook for 25-30 mins stirring occassionaly.

2.add the vinegar ,water and stir well. continue cookingto reduce the liquid and brown the onions.

3. Put eggs in large bowl and beat until frothy. add parmesan, parsley and remaing salt and pepper. pour eggs into pan with onions and mix.

4. over moderate heat stir while shaking pan. eggs will begin to formsmall curds. when eggs are set but still soft on top stop shaking and stirring and allow to set.

5.Carefully turn the frittata and cook for a further 2 mins.
