The proverb "An apple a day keeps the doctor away", addressing the health effects of the fruit, dates from 19th century Wales when Caroline Taggart, author of “An Apple a Day: Old-Fashioned Proverbs and Why They Still Work.” coined a saying in Pembrokeshire in Wales. The original phrase, Taggart said, was, ‘‘Eat an apple on going to bed, and you’ll keep the doctor from earning his bread.” In the 19th century and early 20th, the phrase evolved to “an apple a day, no doctor to pay” and “an apple a days sends the doctor away,” while the phrasing now commonly used was first recorded in 1922.

The apple tree (Malus domestica) is a deciduous tree in the rose family best known for its sweet, pomaceous fruit, the apple. It is cultivated worldwide as a fruit tree, and is the most widely grown species in the genus Malus. The tree originated in Central Asia, where its wild ancestor, Malus sieversii, is still found today. Apples have been grown for thousands of years in Asia and Europe, and were brought to North America by European colonists. Apples have religious and mythological significance in many cultures, including Norse, Greek and European Christian traditions.

Apple trees are large if grown from seed, but small if grafted onto roots (rootstock). There are more than 7,500 known cultivars of apples, resulting in a range of desired characteristics. Different cultivars are bred for various tastes and uses, including cooking, eating raw and cider production.

The center of diversity of the genus Malus is in eastern Turkey. The apple tree was perhaps the earliest tree to be cultivated, and its fruits have been improved through selection over thousands of years. Alexander the Great is credited with finding dwarfed apples in Kazakhstan in Asia in 328 BCE; those he brought back to Macedonia might have been the progenitors of dwarfing root stocks. Winter apples, picked in late autumn and stored just above freezing, have been an important food in Asia and Europe for millennia.

Apples are often eaten raw. The whole fruit including the skin is suitable for human consumption except for the seeds, which may affect some consumers. The core is often not eaten and is discarded. Varieties bred for raw consumption are termed dessert or table apples.

Apples can be canned or juiced. They are milled or pressed to produce apple juice, which may be drunk unfiltered (called apple cider in North America), or filtered. The juice can be fermented to make cider (called hard cider in North America), ciderkin, and vinegar. Through distillation, various alcoholic beverages can be produced. Apple seed oil and pectin may also be produced.

Nutrition: a typical apple serving weighs 242 grams and contains 126 calories with significant dietary fiber and modest vitamin C content, with otherwise a generally low content of essential nutrients.

Apple Pie Filling

18 cups thinly sliced apples
3 tablespoons lemon juice
4 1/2 cups white sugar
1 cup cornstarch
2 teaspoons ground cinnamon
1 teaspoon salt
1/4 teaspoon ground nutmeg
10 cups water

In a large bowl, toss apples with lemon juice and set aside. Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt and nutmeg. Add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.

Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.

Ladle into 5 freezer containers, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.

Seal and freeze. Can be stored for up to 12 months.

Freezer apple pie filling. With this recipe, you can treat your family with pies year-round.

Apple Carrot Zucchini Bread

1 cup unsalted butter, melted
2 cups granulatd sugar
3 eggs, room temperature
1/4 cup fresh orange juice
1 Tbls vanilla extract
3 1/4 all-purpose flour
1/2 tsp salt
2 1/2 tsp baking powder
3/4 tsp baking soda
1 Tbls cinnmamon
pinch of ground cloves
pinch of ground nutmeg
2 cups shredded carrots
1 cup shredded zucchini (unpeeled)
1 cup diced, peeled apple
1/2 cup pecans, chopped (optional)

Frosting
1/2 cup cream cheese, softened
1/4 unsalted butter, softened
2 - 3 cups powdered sugar
1-3 Tbls orange juice as needed

Instructions

Preheat oven to 350 degrees F/175 C.
Grease and flour two 8x4 inch loaf pans.
Blend butter, sugar, egg, orange juice, and vanilla together.
Combine flour, salt, baking powder, baking soda, cinnamon, cloves, and nutmeg together.
Fold dry ingredients into wet along with carrots, zucchini, apples, and pecans.
Pour into prepared pans.
Bake until golden brown, approximately 1 hour, or until loaves spring back when gently pressed with fingers.
Let cool before icing.

Frosting


Cream together cream cheese and butter. Add in powdered sugar and continue mixing. Drizzle in orange juice until desired consistency is achieved.
Frost bread and enjoy!

Apple Oats Porridge

Red Apple/ Custard apple - 1 large, grated along with skin
Quick cooking oats - 3 tbsp
Milk - 5 tbsp
Water - 1/4 cup
Honey - for sweetening (optional)
Chopped almonds or any nuts - to garnish (recommended)

Method

In a saucepan heat water, add the oats and let it cook on a medium-high flame as the oats becomes thick around 2 mins add the grated apple to it and let it simmer.
Now add warm milk to this and let it cook for another minute. Switch off.
Serve topped with honey and nuts.

Apple Oatmeal Cookies

3/4 cup packed brown sugar
1/2 cup butter, softened
2 cups rolled oats
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup chopped walnuts
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1 apple - peeled, cored and shredded
1/2 cup confectioners' sugar
1 tablespoon milk

Preheat oven to 375 degrees F/ 190 C.
Mix together brown sugar and margarine until light and fluffy.
Beat in eggs and vanilla.
Mix in the rest of the ingredients, except for powdered sugar and milk. Stir until well blended.
Drop on cookie sheet and bake 9 to 12 minutes.
Mix powdered sugar and milk in small bowl and drizzle over cooled cookies.

Oatmeal Apple Treat

4 - 5 apples
1 teaspoon cinnamon
100 g butter
1 dl brown sugar
0,5 dl wheat flour
3 dl oatmeal

Remove core from apples. Cut peeled apples to slices. Place the apple slices in a buttered casserole dish. Sprinkle cinnamon on top.
Melt the butter. Mix to melted butter other ingredients. Put mixture on the top of apples.
Bake +200 C, 30 minutes.
Serve with vanilla sauce or ice cream.

Almond Apple Pie

Ingredients:

2 large eggs
125 ml sugar
200 ml flour
1 tsp baking powder
1 - 2 tsp vanilla sugar
2 tbsp cream or milk
100 g butter
2 - 4 apples, peeled, sliced
cinnamon
1 tablespoon sugar

50 g slivered almonds
cinnamon
1 tablespoon sugar

Whisk the egg and sugar lightly. Mix the melted butter among the cream (or milk). Add to the egg mixture, as well the flour and baking powder. Do not mix too much.

Put the dough in a greased pie dish. Arrange the apple slices on top. Sprinkle cinnamon and sugar on top. Cook at 200 degrees C for 10 minutes.

Take pie from oven, add on the top 50 g slivered almonds, a little more cinnamon and 1 tablespoon sugar. Put back to oven and bake 10 - 15 minutes. Don´t let almonds burn too dark.

Serve with vanilla sauce or vanilla ice cream.

3 dl wheat flour
(1 teaspoon vanilla sugar)
0,25 dl milk or cream

Filling:
2 dl gingerbread flavored curd*
0,5 dl cream or milk
1 egg
0,5 dl sugar

Cream together the butter and sugar. Add the egg. Mix the flour, baking powder and add to the mixture. Add milk (or cream). Pour into a greased baking dish.

Mix the ingredients of the filling. Pour to the baking dish. Remove core, cut apples into slices. Put to the baking dish. Sprinkle cinnamon and sugar over the apple slices, add 0,5 dl cream.

Bake in the oven +200C/392 F, 20 to 30 minutes.


*Note: Or add 1/2 - 1 teaspoon cinnamon, 1/4 tsp ginger, 1/4 tsp clove and 1/2 tsp cardamom to 2 dl curd. Mix well. Keep in the fridge few hours.

Bakes Apples

4 apples
1 tablespoon sugar
1 tsp cinnamon
raisins
oatmeals
1/2 dl molasses (dark brown syrup)
water

Remove the cores of the whole apples with a knife or an apple corer, but be careful not to pierce the base. Place the apples snugly in a buttered oven casserole.

Mix sugar and cinnamon. Fill the apple cavities with the raisins and oats fifty-fifty. Add 1 teaspoon of the sugar-cinnamon mix.
Add more raisins and oatmeals to fill the hole. Spread over the syrup. Pour to the dish 1/2 - 1 dl of water. Bake at 175 C for 45 minutes. Serve with vanilla sauce or vanilla ice cream.

Use same recipe like above but different filling:

200 g cream cheese (I used vanilla flavored)
1 egg
1 - 2 dl milk

Mix ingredients together, blend well. Pour over apples, bake +180C 1 hour.

Apple pie

125 g butter
1,5 dl sugar (0.6 cup)
1 egg
1,5 dl wheat flour (1 cup)
1 dl potato flour*
1 teaspoon baking powder
(1 teaspoon vanilla sugar)
2 - 3 sliced apples
cinnamon, sugar

Quark filling:
250 g quark
0,5 dl milk or cream
o,5 dl sugar
1 egg
*Note: You can also use only wheat flour (2,5 dl).

Cream together the butter and sugar. Add the egg. Mix the flour, baking powder and add to the mixture. Pour into a greased baking dish.
Add the slices of apples and pour sugar and cinnamon over the apples. Pour quark filling over the apples. Bake at +225 C/+392 F for 30 minutes.

Cream cheese filling works well too.
