Eggs Baked in Avocado

Servings: 1

1 small egg
1 slice of avokado
sea salt
black pepper

1. Scrape off some avocado to create more space to contain one egg.
2. Crack egg in a separate bowl rather than directly onto the avocado. This way you can control how much of the whites to pour in.

Bake it in the oven at 180C for about 15 minutes. Before serving, sprinkle some sea salt and cracked black pepper over the eggs.

Note: If egg is too large or egg white has too much, result may looks as:

Baked Egg and Cheese Toast (serves 1)

2 slices bread
1 slice of cheese
1 egg
Salt and freshly ground black pepper
Butter (optional)

Preheat the oven to 175 degrees Celsius / 350 F.

Place a slice of bread on a rack. Butter the bread if you like.

Using a heart-shape cookie cutter, cut a hole out of the other bread, leaving around 1 cm border. Cut the slice of cheese into 4 strips and lay them as close as the edges of the bread as possible. Lay the bread-with-a-hole on top and then crack the egg inside.

Sprinkle with a little salt and black pepper. Drop in a dot of butter if you like. Bake for 15 to 20 minutes till bread is browned and the egg is cooked. The egg will be 3/4-cooked. Serve immediately.

Notes:

  • I baked mine for 20 minutes, and the egg is almost cooked. Because I love runny yolks, I'm gonna bake mine for 15 minutes the next time I make it again.
  • Use any cookie cutter you can find, as long as the hole is big enough so that the whole egg fits into the hole.
  • If using big eggs, some of the egg whites may flow out, but doesn't matter as it'll all be absorbed by the bread during baking.

Prepare 2 slices of bread - white, wholemeal... up to your preference.

Butter the bottom slice of bread if you like.

Cut out a heart (or any other you like) shape using a cookie cutter, leaving around 1cm border.

Try to use the biggest cookie cutter you can find, so that there is space for the egg to be filled in, otherwise use a small egg... or simply cut more shapes out.

Grab a slice of cheese...

...divide it into 4 strips.

Lay the strips as close to the edge as possible...

...then place the other slice of bread on top.

The cheese will try its best to act as a seal for the toast.

Crack an egg into the hole.

The egg I used is a little too big, so the egg whites flowed out from the side of the bread. But no harm done, it's still absorbed by the bread during baking.

Season with a little bit of salt, black pepper and butter and bake for 15-20 minutes until the bread is toasted and the egg is cooked.

Egg in a Basket

1 piece of bread
1 egg
butter
salt and pepper

1. Using a thin lipped glass or biscuit cutter, cut a hole in the bread slice.



2. Butter both sides of the bread and place in a pre heated frying pan. Cook over medium heat until the first side is golden brown.



3. Flip the slice of bread to the other side. Turn down the heat to medium low.



4. Place a small pat of butter in the center of the hole and crack an egg inside the hole.



5. Sprinkle with salt and pepper if desired and cover the pan to help cook the egg white.



6. Check the egg every 30 seconds until the egg is cooked to your desired consistency. I like the white completely set with the yolk creamy for dunking the toast.



Note: you can also toast/grill the center piece of bread for extra toast.

Eggs in Potato Nests (Eggs in Hash Brown Nests)

Ingredients
  • 6 whole Medium Russet Potatoes (6 To 8)
  • Salt And Pepper, to taste
  • 24 whole Large Eggs
  • Non-stick Cooking Spray
Preparation Instructions

Preheat the oven to 400 degrees F / 200 C
.
Bake the potatoes until almost tender (potatoes should still have a little bite) 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.

INCREASE OVEN TEMP TO 425 DEGREES F / 220 C.

Spray two muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin cup. Use your fingers to gently press the sides and bottom in each muffin hole to make a nest (don't press the potatoes firmly against the pan; they should sit lightly in the pan.) Spray again (very lightly!) with cooking spray. Bake for 15 to 20 minutes. Watch and make sure they do not burn. (If they seem like they're not browning, kick up the temp to 450 F / 230 C.) Remove when the nests are golden brown.

Allow the nests to cool. Crack an egg into each one. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes. Don't be concerned if some whites bake differently; no two nests will look alike!

Remove from the muffin pan with a spoon or fork and serve.

Baked Eggs in Tomato Cups
(serves 1)

1 tomato
1 tablespoon grated cheddar
2 chives, minced
salt and pepper
1 egg
1 teaspoon milk

Preheat your oven to 350F / 175 C. You will want to hollow out your tomato to make a cup out of it. At the widest part of the top, cut the top off, maneuvering your knife slightly downwards to remove some of the core as well. Hollow out the inside enough to fit an egg inside. You need about a 1/3-1/2 cup of room. Sprinkle the inside with a touch of salt and pepper, half of the cheese and half of the chives. Gently crack the egg into the cup, and drizzle with the milk, it will help to avoid the yolk getting crusty.

Place on a greased baking dish and bake in the oven for 15 minutes. Remove and sprinkle with remaining cheese and chives. Return to the oven for another 5-10 minutes or until egg is set. Eat hot.

Smoked Salmon, Goat Cheese and Dill Egg Muffins

6 eggs
1/3 cup milk
3 slices smoked salmon
3-4 tbs goat cheese, crumbled (or some other cheese you like)
1/2 tomato, chopped
1 tbs chives, chopped
1 tbs fresh dill, chopped
1/8 tsp pepper

Preheat oven to 350 F / 175 C. Grease muffin tin or line with muffin cups, sprayed with non-stick spray.

Whisk eggs. Add milk, chopped smoked salmon, goat cheese, tomato, chives, dill and pepper. Mix together and spoon into prepared muffin tin. Bake for 15-20 minutes.

Makes 8 egg muffins.

Baked Eggs in Bread Bowls

Serves: As many as you want to make

Ingredients
  • Crusty dinner rolls, as many as you choose
  • Eggs, large, one for each roll
  • Mixed herbs, chopped, such as parsley, chives & tarragon, about 1 teaspoon for each roll
  • Heavy cream, 1 teaspoon for each roll
  • Salt and pepper
  • Parmesan cheese, grated, as much as you want to sprinkle on each roll
Directions
  • Slice off top of each dinner roll and gently remove some bread until there is a hole large enough to accommodate an egg. Arrange rolls on a baking sheet. Reserve tops. Crack an egg into each roll. Top each egg with some herbs and a bit of cream. Season with salt and pepper. Sprinkle with Parmesan. Bake in a 350 degree F/ 175 C oven until eggs are set and bread is toasted 20 to 25 minutes. After eggs have cooked for 20 minutes, place bread tops on baking sheet and bake until golden brown. Let sit 5 minutes.
  • Place tops on rolls and serve warm.
