Fishballs

400 g (0.88 lb) pike fillets (or other fish)
bunch of dill
1 tsp of salt
0.5 tsp white pepper
2-3 tbsp of lemon juice
2 dl (0.84 cups) whipping cream
2 egg whites

1. Cut the fillet into pieces and place them in a blender. Puree and season with dill, salt, pepper and lemon juice. Pour in the egg whites and cream and beat until smooth dough.
2. If the dough seems too loose, you can link it to a few spoonfuls of breadcrumbs. Extrude or spoon fish balls in an ovenproof dish and cook in a 180-degree C / 356 F in oven for about ten minutes.

Serve with boiled potatoes, dill sauce and salad.

For the dill sauce:
sour cream
chopped dill
pinch of salt and white pepper

Danish Fish Steaks

I saw that recipe on TV today. The recipe was more or less like this:

1.5 lb (700 g) fish fillets (saithe, pike etc.)
dill, parsley, thyme (a lot of them)
juice of 1 or 2 lemons
sea salt

Chop the herbs and fish fillets as a rough paste. Shape the steaks. Fry in the butter until the bottom is browned. Turn over and fry the other side too. Be carefull that steaks don´t become too dry. Transfer the fish steaks on a plate. Season with coarse salt (sea salt) and lemon juice.

Serve with potatoes and remoulade sauce or use them in the fish burgers.

They looked yummy. :p

Bangalore fish curry
..Ingredients

Shell fish or any other fish - 250 g
Coconut milk - 1 cup and 6 tbs freshly scrap coconut
Onion - 1 big
Green chilies - 4
Ginger - 2 cm piece
Garlic pod - 1/2
Onion chopped - 1 small

For Seasoning

Chili powder - 2 tsp
Tamarind - Small ball
Turmeric powder - ½ tsp
Fenugreek - ½ tsp
Coriander powder - 2 tbsp
Coriander leaves - ½ bunch
Aniseed - 1 tsp
Curry leaf - 1
Tomato - 1 big
Oil - 2 tbsp

Method

1.Clean and cut the fish into big slices.

2.Peel garlic and scrape ginger.

3.Quarter the tomatoes .

4.Soak tamarind in water.

5.Keep the coconut milk aside

6.Roast the coconut gratings along with aniseed, chopped onions and curry leaves in 1 tbsp oil till gratings are brown.

7.Grind this mixture to form a smooth paste.

8.Grind garlic and ginger to a paste. Fry this paste also in oil and keep aside

9.Dissolve the ginger-garlic paste in a little water and add , coriander powder, turmeric powder and salt and bring it to boil

10.Cook fish till it is almost done.

11. To this, mix coconut paste along with coconut milk.

12.Finally add curry leaves and coriander leaves. Boil and remove from fire.
