I promised to one member here send recipe of this food. It may have several different recipes in other countries as it is widely known in the Middle East.

This is mine:

Baba ghaloush

Eggplants - roasted
Lemon juice
Tahina
Garlic
Salt
Olive oil
Parsley (optional)

Making quite same than hummus bi tahini. Mix all together. I didn´t put how much each one needs as it depends what taste good for you.

Bread for dipping

Wait others if they are different. :lol:

This is what is called: Begun Bhorta/Smashed Eggplant in my country.


I like it very much, with hotchpotch/khichdi/Khichuri.

anyays, my mom's recipe goes:

Roasted Eggplants
Mustard oil
salt to taste
onion shopped/sliced
green chili sliced or chopped/ dried red chili flakes
coriander leaves

just mix all, thats it, easy and taste like,..................nothing to compare with!!

just a different we eat it with plain rice/Khichdi/Hotch-potch rice.

you can try it, or anyone can try it, really it is very tasty and I think BABA GHANOUSH must taste good also.
