Lokmit elkadi (dessert)


Ingredients:

1 teaspoon yeast.
1 teaspoon sugar.
2 1/2 cup warm water or more if needed.
3 1/2 cup flour.
salt.
1 cup powder sugar for decoration.
frying oil.
sugar syrup.


Method

 Mix water and yeast in a little water and leave it till it reacts.
 Mix salt and flour, add yeast and water and mix it well with hand till it gets soft light dough.
 Place some of the dough in the hand palm and press weakly, use a teaspoon wetted by water to take the dough balls and place it in the hot oil. Move it till it takes golden color.
 Take it of the oil and place it into syrup for a few minutes, take it off the syrup and leave it for some time to lose the extra syrup inside it.
 Could be decorated using the powder sugar in stead of the syrup.
 Serve with mango sauce, melted chocolate, and kiwi.

Falafel (traditional )





Ingredients


2½ cups skinless, dry beans
¼ cup fresh parsley, chopped
1 medium sized onion, chopped
8 garlic cloves
¼ cup green coriander and dill
1 teaspoon dry coriander
½ teaspoon sodium bicarbonate (baking soda)
1 tablespoon water
salt
¼ teaspoon chili powder
¼ teaspoon ground cumin
¼ tablespoon mixed spices
sesame for garnish
frying oil

Direction

1. Rinse beans and soak in water for 8 hours; chage the water frequently.
2. Drain and rinse well.
3. Mix vegetables with beans.
4. Blend and mix in food processor twice or three times if necessary until you get a consistence of a dough.
5. Mix baking soda and water and stir until soda is disolved, add to the processed beans and stir in spices, mixing everything well.
6. Heat oil in a saucepan over a medium heat until it reaches 350°F.
7. Form the bean dough into small balls of approximately 3 cm in diameter. Roll in sesame seeds and drop into hot oil. Fry in for five minutes or until well done.

Falafel may be served alone or as a sandwich with salad.

Notes

Chick peas may be substituted for the beans.

Falafel may also be stuffed with cheese or a mixture of boiled eggs and spices or even small pieces of dry meat.

( i love this dish and i made for the first time acouple days ago and my family loved it alhmdulillah and inshAllah you will like it )





Ingredients for the Sauce:

2 garlic cloves, chopped
2 T vegetable oil
1½ C tomato sauce
¼ t hot pepper
1 T White Vinegar
Salt and Pepper to taste

Ingredients for the Kosharee:

2 C short grain rice
1 C brown lentils
4 C water
½ K elbow macaroni
salt and pepper
2 onions, sliced
4 T vegetable oil

Directions:

For the Sauce:

*Heat the oil over a medium heat, saute the onions and garlic until golden brown.
*Add the tomato sauce, hot pepper, salt and black pepper. Bring to a boil, then reduce heat to low and simmer for approximately 10 minutes.
*Add Vinegar and simmer for an additional 5 minutes.
*Remove the sauce from the heat and set asside to be served with the Kosharee.

For the Kosharee:

1-Rinse the brown lentil very well; drain, squeeze out the excess liquid, and set aside.
2-Heat the oil over a medium heat, and saute the onion until golden brown.
3-Remove onion from the oil spread on a paper towel to absorbe the excess oil.
4-Place the lentils into the pot used for the onion, stir well and add water until covered. Season with salt and pepper. Reduce heat and leave for 25 minutes until the lentil begins to cook. Stir in rinsed rice and season with salt.
5-Leave on low heat until it is completely cooked, you may add water if needed.
6-At the same time boil the macaroni, drain and keep aside.

Serving:
- When served, mix rice and lintel , then add small amounts of macaroni and serve with Tomato sauce and fried onion . It can be served with chopped tomatoes and Hoummos salad.

الفطير المشلتت


المقادير


4/3 4 كوب دقيق (لكل الأغراض )
1 ملعقة صغيرة ملح
2 كوب ماء

الطريقة
- يوضع الدقيق والملح في آلة العجن ثم يُضاف الماء ويُعجن حتى تندمج المكونات ويصبح العجين كتلة واحدة ويكون أملس ومطاطي (يعجن لمدة 15 دقيقة بآلة العجن أو 45 دقيقة باليد).
- يُقسم العجين إلى قطع متساوية ويُضغط عليها باليد حتى يخرج منها الهواء ثم تُكور وتُدهن جيداً بالزبدة السايحة ويُترك لمدة 15 دقيقة على الأقل.
- يُجهز الفرن بتسخينه على أقصى درجة حرارة.
- تُدهن 4 أو 5 قطع عجين بالزيت.
- تُفرد قطع العجين على سطح رخامي بالنشابة حتى تصبح رقيقة جداً.
- تُشد من جميع الجهات ثم تُطبق من الجهات الأربعة حتى تكون شكل مربع ماعدا آخر قطعة تُترك مفرودة.
- توضع الفطائر المطبقة في وسط الفطيرة المفرودة.
- تُطبق الفطيرة المفرودة من الجهات الأربعة لتشكل مربع فوق الفطائر التي بداخلها.
- تُطبق زوايا العجين الأربعة لتكون شكل دائرة.
- توضع على صاج فرن مدهون بالزيت.
- تُخبز في الفرن لمدة 15 دقائق أو حتى يصبح لونها ذهبياً.

يمكن حفظ العجين بعد دهنه بالزبدة في الثلاجة (البراد) لمدة 4 أيام.



Feteer Meshaltet "arabic pie"



Ingredients

4 ¾ cup flour (all purposes)
1 teaspoon salt
2 cup water

Method

- Put flour, salt and water in a blender and mix well until the dough becomes one smooth and elastic piece (knead for 15 minutes or 45 minutes by hands).
- Divide the dough into equal parts and press by hand to puff the air out. Shape into balls and grease with melted butter, and set aside for 15 minutes at least.
- Preheat the oven to the highest degree possible.
- Grease four or five pieces with oil.
- Spread the dough pieces on a marble surface by a rolling pin until they become very thin.
- Pull from all sides and fold from four directions until you get a square shape. Leave the last piece spread.
- Put the folded pies in the middle of the spread one.
- Fold the four sides to make square over the pies inside.
- Bring the corners around the filling to make a circle.
- Place on a greased tray with oil.
- Bake for 15 minutes or until it turns golden brown.

The dough can be kept in the refrigerator for 4 days after it is greased with butter.
