Fettuccine with Alfredo sauce


Ingredients:

Milk powder 70g (water 100 ml)
Diced chicken breast 400g
Sliced button mushrooms 200g
Fettuccini –fresh or dried 250g
Garlic cloves 3 (finely chopped)
Onion 1 (finely chopped)
Fresh basil leaves 10 (shredded)
Egg yolks 2
Chicken stock cube 1 (water 150 ml)



Preparation:
• Heat a little oil in a frying pan, add the diced chicken and cook over medium heat.
• Remove the chicken from the pan. Add a little more oil sauté chopped onions, garlic and sliced mushroom. Cook over medium heat until tender.
• Add the chicken stock, boil to reduce by half before adding the rainbow milk powder (mix with water) bring to boil again.
• To thicken the sauce, beat the egg yolks in a cup and stir into the boiling liquid. Remove from the heat
• While the sauce is cooking, prepare the fettuccine
• Add the sauce, fresh basil and blanched fettuccine to the cooked chicken. Mix well and season with salt and pepper to taste. Serve hot.
