Fresh Strawberry Frosting

1 cup fresh strawberries
1 cup butter
1 cup confectioners' sugar, sifted
1 teaspoon vanilla extract
2 1/2 cups confectioners' sugar, sifted, divided

  1. Place strawberries in a blender; puree until smooth.
  2. Transfer strawberry puree to a saucepan over medium heat; bring to a boil, stirring often, until puree is reduced by at least half, about 20 minutes. Remove from heat and cool completely.
  3. Beat butter with an electric mixer in a bowl until light and fluffy.
  4. Beat 1 cup confectioners' sugar into butter until just blended.
  5. Beat 2 tablespoons strawberry puree and vanilla extract into butter mixture until just blended.
  6. Repeat with 1 cup confectioners' sugar, followed by 2 tablespoons strawberry puree two more times
  7. Beat last 1/2 cup confectioners' sugar into mixture until just blended.

Fluffy Lemon Buttercream Frosting

3 1/2 cups confectioners sugar
1/2 cup of butter (1 stick) softened
1/4 cup of milk
1 t vanilla
1 T lemon zest (the rind of a lemon)
2 T lemon juice

Mix the butter, lemon zest and vanilla together, making sure all the lumps are gone.
Add the milk, and quickly cream it into the butter mixture.
By the 1/2 cup, mix in the sugar.
Once the sugar is all in the bowl, cream on "high" for two minutes.
Mix in lemon juice.
Spread heartily on cupcakes, and enjoy!

Honey Peanut Butter Butter-Cream Frosting

2 sticks of room temperature butter or margarine
4-5 cups of powdered sugar
1 teaspoon of vanilla
2 tablespoons of honey
1/2 cup of creamy peanut butter

Cream you butter, slowly add in powdered sugar (about 3 cups worth) until smooth. Add vanilla and mix. Slowly add in honey and peanut butter and mix until creamy and smooth. Lastly add in a little more powdered sugar (maybe a cup or a cup and a half) until you find the consistency you desire. Should be thick and creamy.

You can drizzle honey over top right before serving if you wish.

Seven-Minute Coconut Frosting

This sweet, fluffy icing, known as a seven-minute frosting, has been a favorite among bakers since the 1930s. Its texture is similar to meringue.

Ingredients:
  • 4 egg whites
  • 1 1/3 cups sugar
  • 1/2 cup light corn syrup
  • 1/4 tsp. salt
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
Directions:
In the bowl of an electric mixer, using a handheld whisk, beat together the egg whites, sugar, corn syrup and salt just until combined, about 30 seconds. Place the bowl over but not touching simmering water in a saucepan and whisk until the sugar dissolves and the mixture is hot, 2 to 3 minutes.

Set the bowl on the mixer fitted with the whisk attachment and beat on medium speed for 3 minutes. Add the vanilla and beat until the outside of the bowl is cool and stiff peaks form 5 to 7 minutes more. Using a rubber spatula, fold in the coconut just until incorporated.

Marzipan Decoration Ideas

1. Bees


Bees are easy to make. Use 1-2 oz. of marzipan and some sliced almonds for the wings. Paint them with black frosting or use the melted chocolate for the "bee look".



Ready to take off!




Recipe to the second picture:

Marzipan Bees:
1/4 cup marzipan
1/4 cup sliced almond
black food coloring

To create the marzipan bees: Take a small piece of the marzipan and roll it between the palms of your hands until it is lozenge-shaped. You can taper one end slightly to be the back of the bee. Paint the stripes on the marzipan with a clean paintbrush or toothpick and black food coloring. Allow it to dry until it is no longer tacky.

Once the stripes are dry, press the sliced almonds into the sides to create the bees’ wings.

Apricot Frosting

  • 1 8 oz package of cream cheese softened
  • 1 stick butter softened
  • 1/2 cup apricot preserves
  • 1 tsp vanilla extract
  • 3 1/2 cups powdered sugar
  • 2 Apricots for garnish

  1. Mix Cream Cheese and Butter in a medium sized bowl using an electric mixer until creamy.
  2. Add vanilla extract and mix well.
  3. Add half the apricot preserves until well mixed. Add half the powdered sugar and mix well, alternate between the preserves and the powdered sugar until the frosting is at a good spreading consistency.
  4. Garnish with Apricot wedges.

Sweetened Crystallized Roses

Ingredients

  • Egg white, 2
  • Sugar, 1 small bowl
  • Water, 1 cup
  • Brush, 1
  • Wax paper
  • Edible Rose Petals, 1 bag
Preparation

Having sweetened crystallized roses is a good idea since these can serve as a great snack and also as a beautiful dessert decoration.

Mix the egg white and water in the bowl and stir until there are no bubbles within the mixture.

Soak the brush in the mixture and completely and gently paint each rose petal.

Fully cover the rose petals with sugar.

Place each petal on the wax paper and leave it dry in a room with no humidity, they should take around 12 to 36 hours to dry.
