Prep time: 5 minutes
Cook time: 30 minutes

Method

1 Preheat the oven to 400°F/200C.
2 Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact. Using a knife, cut off 1/4 to a 1/2 inch of the top of cloves, exposing the individual cloves of garlic.

3 Place the garlic heads in a baking pan; muffin pans work well for this purpose. Drizzle a couple teaspoons of olive oil over each head, using your fingers to make sure the garlic head is well coated. Cover with aluminum foil. Bake at 400°F/200C for 30-35 minutes, or until the cloves feel soft when pressed.

4 Allow the garlic to cool enough so you can touch it without burning yourself. Use a small small knife cut the skin slightly around each clove. Use a cocktail fork or your fingers to pull or squeeze the roasted garlic cloves out of their skins.
Eat as is or mash with a fork and use for cooking. Can be spread over warm French bread, mixed with sour cream for a topping for baked potatoes, or mixed in with Parmesan and pasta.

Roasted Garlic and Olives Pizza

summer+017.jpg

1 recipe pizza dough (as usual, I use about 2/3 of this recipe for one pizza and save the rest for breadsticks, etc later in the week)
3 heads of garlic, cut in half horizontally
1 1/2 cups of a variety of olives, roughly chopped
red and yellow bell peppers, chopped in 1/2" pieces
1 cup of shredded mozzerella

1. Pre-heat oven to 350. Arrange cut heads of garlic on a square of foil each. Sprinkle with salt, pepper and drizzle with olive oil. Seal-up foil and roast until soft, about 1 hour.Remove and let cool completely before squeezing out paste-like insides.

2. Spread roasted garlic on pizza dough. Arrange toppings and bake at 400 until cheese is bubbly.

You can crush the capsules on the pizza. Might be a little crunchy with tiny little particles, but it'll do I suppose.

you mean running out of garlic ?that's too bad if one is staying quite a distance away from supermarkets.
Then i suggest that to start planting some garlic trees,
that way it'll come in handy anytime you need.
masha'allah!
