I would approach the institution, either the ombudsperson or the dean and file a formal complaint. I would also send an e-mail to the professor, this is bette than having an in person discussion because that way you can save the email and gather evidence. You may also want to tape the class lectures. If it is quite bad, you can address the matter as a human rights issue.

If you think you have enough knowledge about Islam, talk to him/her about the concepts of islam and explain the main aspects of it in a simple detailed matter, And how some muslims may go astray and act out of ignorance which gives a bad image of islam.. If not, i'd suggest you go with sister Akilah.
