Assalaamu alaikum warahmatullaah,
I made this lastnight.
I experimented on the filling 'cause I think the original one is boring. Alhamdulillaah it turned out really good. Normally, they only put bean sprouts and/or chicken and/or beef and/or tuna. I put crushed basil leaves to give it a twist and lotsa carrots 'cause I love carrots!
INGREDIENTS:
(For the Filling)
Tuna flakes
Chopped onions
Crushed garlic
Minced Carrots
Olive oil - optional
(For the wrapper)
You can just buy them or make them.
To make visit http://www.pilmico.com/pilmico/recipes/lumpia_wrapper.htm
DIRECTIONS:
* Pre heat tuna flakes oil or olive oil in a pan
* Saute garlic then follow the onions next the carrots and leave 5 mins to simmer.
* Add the tuna flakes then follow the crushed basil leaves. Saute for 3mins.
* Set aside filling in a bowl.
* Get one Lumpia wrapper and careful not to tear it 'cause it's very thin.
* Take one heaped tablespoon of filling and place it at one edge of the wrapper.
* Roll it twice and fold the sides inwards then roll it again until it reaches the other edge and wipe water on it to seal.
* Continue doing it until all fillings are wrapped.
* Pre heat cooking oil for 3mins in a low medium fire. (Wrapper is sensitive as it is very thin)
* Dip fry Lumpias until it is golden brown in colour.
* Enjoy with desired sauce. You may use ketchup, hot sauce etc. Tadaaah!
