My mom gave me this recipe, and a couple of people have asked for this, so I'll post it here. I hope everything in it is acceptable to eat. If it isn't, let me know I'll remove this. My grandma used to make this when I was younger :)



Coca Cola Cake

2 cups unsifted flour
2 cups sugar
2 sticks margarine
1 T cocoa
1 cup coca cola
1 t baking soda
2 eggs
1 t vanilla
1/2 t salt
1 1/2 cups marshmallows, mini
1/2 cup buttermilk

Put sugar and flour into bowl.

Heat margarine, cocoa and coke to boiling point. Pour over flour mix, blend. Add Buttermilk, soda, eggs, vanilla and salt. Blend. Add marshmallows. Batter will be thin and marshmallows will float on top. Pour into greased and floured 9 X 13 pan. Bake 350 degrees for 30-35 minutes.

ICING:

Icing for Coca Cola Cake

Mix 1 Box confectioners sugar
1 cup chopped nuts
1 t vanilla

Heat to boiling: 1/2 cup butter
2 T cocoa
6 T coca cola

Pour over sugar mix and blend.

Pour all over waqrm cake. After cake is cool - put cover on pan and wait at least one day to eat it. This makes it more moist.

Also how much is "2 sticks margarine" and is cup as desilitre (1/10 by litre)?

I use European measures and you have some other system there.

The thread was closed so I will post my recipes as I get them via e-mail.

For conversions I just Google.

I will start with simple stuff first.

Cranberry sauce...it is easiest to buy a small can. A small can goes a long way. I open both ends of the can to allow the jellied sauce to slide out. I place it on a small serving dish garnished with a bed of lettuce..This is a last minute thing to do. Some people like to slice the sauce with a knife...I just use a spoon.
Others prefer an organic sauce..a farmers market is the best place to purchase them. The sauce has the berry chunks in it. ( this I like, and nobody else).

Candied sweet potatoes...

I take about 5 large sweet potatoes. I peel them and let them boil for 20 minutes..tender...I slice the potatoes...In a large iron skillet I put a butter and brown sugar..I am heavy handed with the butter and sugar..I allow it to caramelize and put the potatoes in the glaze...I put it on low heat for about 15 minutes...you can use halal marshmallows to add sweetness.

Aapa is right, I'm not good at finding exact measurement conversions, so google would be best bet.

This is simply good:

Corn Pudding
In the summer, when the corn is fresh, I cut the corn off the cob. During the winter months, I use Fresh Cut corn from the can (Del Monte)


4 cans Fresh Cut corn
2 eggs
1 tablespoon of butter
½ c Half and Half
½ c whole milk
Start with ½ c sugar
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon nutmeg
1 teaspoon All Purpose flour

Preheat oven to 350 degrees.

Wipe 4 cans of corn.
Open cans and pour off the water.
Place corn in a deep Pyrex dish.
In a large bowl, blend milks, eggs, vanilla and lemon flavors, nutmeg. In a small bowl, stir flour and 1 tablespoon of the liquid mixture together until smooth. Stir this into the blended mixture.
Pour the mixture into the corn and mix with spoon.
Slice the butter into small pieces and place randomly over mixture. Sprinkle additional sugar* and nutmeg.
Place in oven. Cook until top turns golden brown.

I like to use cinnamon sugar for this sprinkling. If you have this, use in addition to nutmeg.

Peanut soup

Peanut soup is a staple in the peanut growing areas of Virginia, Franklin, Courtland, Boykins, etc, Basicially, Surry and Southhampton counties. Williamsburg is across the James from here, which is why it is popular there. A more traditional recipe than Flay's updated one, can be found at the Whitley's peanut website, but here it is:
COLONIAL PEANUT SOUP

2 tablespoons butter
2 tablespoons grated onion
1 branch celery, thinly sliced
2 Tablespoons all-purpose flour
3 cups chicken broth
1/2 cup creamy peanut butter
1/4 teaspoon salt (optional)
2 Tablespoons lemon juice
2 Tablespoons chopped roasted peanuts

Melt butter in a saucepan over low heat; add onion
and celery. Saute for about 5 minutes. Add flour and
mix until well blended. Stir in chicken broth and allow
to simmer for about 30 minutes. Remove from heat,
strain broth. Stir the peanut butter, salt and lemon
juice into the strained broth until well mixed. Serve
hot in cups. Garnish each cup with a teaspoon of
chopped peanuts. Makes 6 servings.

Sweet Potato Pie
Ingredients:
4 small sweet potatoes
2 beaten eggs (room temperature)
1 stick of butter
1 cup of sugar
½ fresh lemon
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon all spice
1 can evaporated milk
2 frozen pie crust

· Boil potatoes until done. Pour off the hot water and run cold water over the potatoes.
· Remove the skin and place in a blender bowl.
· Put in the stick of butter along with sugar and beaten eggs. Beat at medium speed until well blended.
· Squeeze lemon juice over blended ingredients. Blend.
· Add vanilla, cinnamon, nutmeg, and allspice. Blend.

· Add additional sugar to your taste.
· Pour in a large bowl and cover with Saran wrap. Place in refrigerator overnight.
Remove from refrigerator 45 minutes before ready to bake. Pour evaporated milk in the batter and blend well.
Preheat oven to 375 degrees. Place pies in oven for one hour to an hour and 15 minutes. Allow to cool before cutting.
