The wine mentioned in the Quran is not the same, this wine will not make you drunk. Anything that you drink in large amount that will make you drunk is haraam even if you take it in small amount. I remember this from one of the hadith (sorry lazy to find the source, just remember this it is hadith).

the wine promised by Allah (SWT) in Jannat will not make people drunk, nor cause any headaches.
Surah Al-Waqiah verses 17 -19:
17. They will be served by immortal boys (servants),
18. With cups, and jugs, and a glass from the flowing wine,
19. Wherefrom they will get neither any aching of the head, nor any intoxication.
Allah has made wine haraam for us as a way of testing us in our obedience. it causes sclerosis of the liver, depression, rape, drunk driving, violence in the household, headaches, and hangovers.
But since non-muslims drink wine in this lifetime, Allah is Just and He has promised that those who enter Paradise, because they would have abstained from wine in this life, He will give them wine which will not ruin one's health.

Also the wine, milk, honey, fruits and everything good to eat and drink will be special because in Jannat, people will not feel hungry or thirsty. They will only eat and drink for lazzat (pleasure).
a key difference between worldly food and the food of Jannat is that everything you eat in this world gives less pleasure than the previous bite (law of diminishing returns). for example, enjoy 7 ice creams the 8th one of the same flavor will not taste so good.
but the ice cream of Jannat will be such that every spoonful will taste better than the last one.
