I made these finally - almost two years after I said I would.
However, for anyone attempting this recipe, my advice would be to please not mess with piping bags - it makes things infinitely more difficult. I don't have the real piping bag, so I used normal empty plastic candy bags as a substitute. But it was very difficult to work with, and especially the cream does not fill in to the puff with the bag - it kept coming out without going inside the puff.
So here's the alternative EASIER way:
For the puffs: Once the dough is ready, take two tablespoons. Drop the dough onto the baking sheet with batter in one sp0on, and use other spoon to push onto the tray. You can dip your finger in water and settle the shape on the tray to make it more presentable.
For the cream: Instead of making a hole in the bottom and piping cream in (didn't work for me), cut open the top 1/3rd of the baked and cooled puff but don't cut all the way, only make a slit halfway, and fill in the cream using a small spoon. Push close the top.
