When were the hadith collected?

A friend of mine has been researching about Islam. Allhamdulillah I was extremely happy when she emailed me about this some months ago. People around you who you think may never want to ask you about Islam are the ones who turn around and do :ma:

She's asked me about the hadeeth in particular and how they were collected. I have failed to answer adequately i think so thought I would turn for your help here at the forum. I've searched on the net, and have found some good websites but they don't seem to explain what she's asked me in detail.

I can't find information on when the hadeeth were first collected and how.
Could anyone help me out by suggesting some good websites I can have a look at or books?
